For the diagnosis and improvement of the process, the six factors that influence the selection of the process were analyzed using an integration of tools such as: interviews, load and capacity balance, OTIDA diagram, ABC technique, as well as demand forecast, which allow to obtain important results related to the organization of work in the area, the quality of wedding cakes and therefore the satisfaction of the final customer.

Para el diagnóstico y mejora del servicio se analizaron los seis factores que influyen en la selección del proceso con el empleo de herramientas como: entrevistas, balance de carga y capacidad, diagrama OTIDA, técnica ABC, así como pronóstico de la demanda, las cuales inciden en los resultados relacionados con la organización del trabajo en el área y por tanto, la satisfacción del cliente final.
