The objective of the present titration work was to evaluate the best panettone making alternative in bakeries of the independent market, the methods to be evaluated are the traditional one and the use of pre-mix that can be found in the market, presenting the flow of unit operations for the elaboration of each alternative, in a way that allows us to compare and evaluate the following technical aspects: quantity of ingredients, standardization of the product, labor, personalization of the product, cost per unit of product, storage and availability of ingredients, determining the most important benefits of each of the methods.

El presente trabajo de titulación tuvo como objetivo evaluar la mejor alternativa de elaboración de panetones en panaderías del mercado independiente, los métodos a evaluar son el tradicional y el uso de pre mezcla que se puede encontrar actualmente en el mercado, presentando el flujo de operaciones unitarias para la elaboración de cada alternativa, de manera que nos permite comparar y evaluar los siguientes aspectos técnicos: cantidad de ingredientes, estandarización del producto, mano de obra, personalización del producto, costo por unidad de producto, almacenamiento y disponibilidad de ingredientes, determinando los beneficios más importantes de cada uno de los métodos.
