The loss of his mother when he was only 13 years old, the distance from his father, away on business, and the necessity to make shift to mantain his sister as well, were the catalysts for his early entrance in the gastronomic world: first the seasonal work in the hotels of Salsomaggiore and Cortina, later a job in a delicatessen shop until, in 1992, he founded the Cantinetta and with it he found a new way, very creative and original for the people of Parma, of interpreting fish, bringing out its substance, making its taste more precious, without betraying its essence.

La scomparsa della mamma quando aveva solo 13 anni, la lontananza del padre per questioni di lavoro e il dover ‘arrangiarsi’ per mantenere anche la sorella sono stati i catalizzatori per il suo ingresso anticipato nel mondo gastronomico: le stagioni negli alberghi di Salsomaggiore e Cortina, poi un impiego in salumeria, sino al 1992 l’anno della Cantinetta e di un nuovo modo, a dir poco creativo e originale per i Parmigiani, di interpretare l’elemento ittico valorizzandone la sostanza, impreziosendone il gusto, senza tradirne l’essenza.
