Die vorliegende Erfindung betrifft eine IgY-Zusammensetzung, dadurch gekennzeichnet, dass die IgY-Zusammensetzung Ig Y-Antikörper, Fragmente und/oder Fab-Fragmente davon enthält, die spezifisch an ein Peptid mit einer Aminosäuresequenz mit der SEQ ID No. 1 binden, sowie die Verwendung dieser IgY-Zusammensetzung in der Therapie von Zöliakie, Rheuma und/oder Weizenallergie.
