The present invention elucidates a microbe which causes the occurrence an off-odour and an off-taste in acidic milk beverages having a pH of at least 3.5, and addresses the problem of providing a means for inhibiting growth of this microbe, without losing the flavour of the original beverage.

本発明は、pH3.5以上の酸性乳性飲料における異味異臭発生の原因となる微生物を解明するとともに、当該微生物の増殖を抑制し、かつ飲料本来の風味を損なわない手段を提供することを課題とする。 本発明によれば、ジグリセリンミリスチン酸エステル及び/又はその塩を有効成分として含有するプロピオニバクテリウム属細菌増殖抑制剤、および当該プロピオニバクテリウム属細菌増殖抑制剤を含む、pH3.5以上の酸性乳性飲料が提供される。
