Some want it as a sort of popular symbol of generosity, a dish created by the harvesting of fish from the fishermen offered to the family of a comrade who died during a storm. According to historian Paul Zalum from Leghorn but of Syrian origin, the fish soup was invented by a keeper of the lighthouse of the port. Because of an edict forbidding the Florentine Republic to fry the fish (since the oil had to be used to power the light the lighthouse), he invented this soup, where very little oil is needed.

Secondo lo storico livornese di origine siriana Paolo Zalum, il cacciucco sarebbe stato inventato da un guardiano del Fanale, il faro del porto, al quale un editto della Repubblica fiorentina proibiva di friggere il pesce (perché l'olio doveva essere usato per alimentare la luce del faro).
