Es ist Aufgabe der vorliegenden Erfindüng, bei einer UHT-Anlage der der gattungsgemäßen Art eine genaue und zügige Temperaturanpassung des aus der Vorerhitzerzone austretenden Lebensmittelprodukts an die Temperaturverhältnisse am Eintritt der Hocherhitzerzone zu erreichen, gleichzeitig bei gleicher Verweilzeit für alle Teilmengen des Lebensmittelprodukts eine thermisch besonders schonende Behandlung des Lebensmittelprodukts sicherzustellen und die mechanische Belastung des Lebensmittelprodukts so niedrig wie möglich zu halten.

The aim of the invention is to achieve accurate and fast temperature adjustment of the food product leaving the pre-heating zone to the temperature conditions at the inlet of the high-heating zone in a UHT system of the generic type, and at the same time, with an equal dwell time for all partial amounts of the food product, to ensure that the food product is treated in a particularly thermally gentle manner and to keep the mechanical loading of the food product as low as possible.

L'objectif de la présente invention est d'obtenir avec une installation à température ultra-élevée du type générique une adaptation précise et rapide de la température du produit alimentaire sortant de la zone de pré-réchauffeur aux conditions de température à l'entrée de la zone de réchauffeur à haute température, de garantir en même temps un traitement particulièrement délicat au plan thermique du produit alimentaire avec un temps de séjour identique pour toutes les quantités partielles du produit alimentaire et de maintenir aussi basse que possible la sollicitation mécanique du produit alimentaire.
