Drying of three varieties of cassava, was conducted in a tunnel type dryer; the effect of temperature, variety and velocity of drying air on the drying time, using a completely randomized design in factorial arrangement with three factors: temperature (45, 55 and 70°C), speed drying air (1, 3 and 4 m/s) and range (Corpoica Tai, Gines and Veronica), performing three replicates per treatment, resulting in a decrease in drying time to the temperature of 70 ° C for the three varieties.

El secado de tres variedades de yuca, se realizó en un secador tipo túnel; se evaluó el efecto de la temperatura, variedad y velocidad de aire de secado en el tiempo de secado,empleando un diseño completamente al azar en arreglo factorial con tres factores: temperatura (45, 55 y 70 oC), velocidad de aire de secado (1, 3 y 4 m/s) y variedad (Corpoica Tai, Gines y Veronica), realizando tres repeticiones por tratamiento, dando como resultado una disminución en el tiempo de secado para la temperatura de 70oC para las tres variedades.
