Breast & Flap and Flap are removed by a straight cut parallel on each side and measured from the dorsal edge and commencing from the junction of the 1st rib (sternum) to the reflection of the diaphragm at the 11th rib and following on through the Flap to the superficial inguinal lymph node.

Cette découpe est préparée à partir d’une carcasse en enlevant les parties suivantes: la poitrine et le flanchet sont enlevés au moyen d’une coupe en ligne droite courant en parallèle de chaque côté, mesurée à partir du bord dorsal, en commençant à la jonction de la première côte (sternum), puis en passant au niveau du diaphragme à la onzième côte et en poursuivant à travers le flanc jusqu’au ganglion lymphatique inguinal superficiel.

Заднюю часть с седлом получают из туши путем удаления следующих частей: грудинка с пашинкой и пашина удаляются прямым разрубом, проходящим параллельно по каждой стороне от кромки спины начиная от соединения первого ребра (грудной кости) до загибания диафрагмы у одиннадцатого ребра, а затем через пашину до поверхностного пахового лимфатического узла.
