Mit dem erfindungsgemäßen Verfahren ist auf Basis bekannter Rezepturen und Leitsätzen typischer Rohwurstsorten dafür Sorge getragen, dass ein rapider Anstieg der Mikroorganismenanzahl, gebildet durch Mikrokokken und/oder Laktobazillen o.ä., durch Zugabe von Folsäure und/oder Folate verursacht wird.

The inventive method is based on previously known recipes and basic principles used for producing typical kinds of raw sausage, the number of microorganisms formed by micrococci and/or lactobacilli or similar being made to increase rapidly by adding folic acid and/or folate.
