It appears that the tuna has not been kept according to the conditions stipulated in law: instead of being frozen at ‐18°C — the temperature at which it must be kept for it to be sold ‘fresh’ — the fish has been conserved at ‐9°C, which increases the risk of its containing dangerously high levels of histamine after thawing.

El problema radica en que el pescado no se ha conservado conforme a los parámetros que establece la ley. Así, en lugar de congelarse el pescado a -18 °C —la temperatura a la que se tiene que congelar para su venta en fresco—, se estaría haciendo a -9 °C, por lo que al descongelarse se produce mayor riesgo de presencia de altos niveles de histamina.
