ABSTRACT The rambutan "Nephelium lappaceum" is a tropical fruit that was introduced 55 years ago in the state of Chiapas where it has increased its culture by its acceptance in Mexico and their broad prospects for export, however its shell which form a 15 per cent of the fruit is not traded, in this work, we sought to take advantage its shell by the antioxidant properties it possesses.

RESUMEN El rambután “Nephelium lappaceum” es una fruta tropical que se introdujo hace 55 años en el estado de Chiapas en donde se ha incrementado su cultivo por su aceptación en México y sus amplias perspectivas de exportación, sin embargo su cáscara que forma un 15 % de la fruta no se comercializa, en este trabajo se buscó aprovechar su cáscara por las propiedades antioxidantes que posee.
