Abstract The current study involved the evaluation of the effect of UV-C light on the quality of Fragaria vesca variety diamond with the purpose of increasing the shelt life of this products which is highly perishable due to its breathing rate and its great susceptibility to the mold Botrytis The results of the characterization physical-chemistry, quality microbiology and sensorial analysis, they allowed to determine the maximum time of conservation of the strawberry (Fragaria vesca),el which is of 10 days in refrigeration where the time of incidence of the light UV-C and the distance of the lamps to the strawberry has a preponderant paper.

La presente investigación consistió en determinar el efecto de la luz UV-C en la calidad de la fresa (Fragaria vesca) variedad diamante, con el propósito de alargar su tiempo de vida útil, puesto que la fresa es un alimento perecedero, dada su alta tasa de respiración y su gran susceptibilidad al hongo Botrytis cinerea. Los resultados de la caracterización físico-química, calidad microbiológica y análisis sensorial, permitieron determinar el tiempo máximo de conservación de la fresa (Fragaria vesca), el cual es de 10 días en refrigeración donde el tiempo de incidencia de la luz UV-C y la distancia de las lámparas a la fresa tiene un papel preponderante.
