In this way, it begins by mentioning the Huecas of the city of Guayaquil that participated in the Raíces Gastronomic Fair of 2017, in order to carry out the due analysis, it is necessary to develop three data collection tools (cards) that have the variables to carry the above mentioned study, of which two are directed to the clients and the owner of the establishment, and the third will be used by the researcher together with the observation technique.

De esta manera se comienza mencionando a las Huecas Tradicionales de la gastronómica de la ciudad de Guayaquil que participaron en la Feria Gastronómica Internacional del Ecuador “Raíces” del año 2017, para realizar el debido análisis se procedió a desarrollar tres herramientas metodológicas (fichas) de recopilación de datos que poseen las variables para llevar a cabo el estudio mencionado, las cuales, dos de ellas están dirigidas a los comensales y al propietario del establecimiento, mientras que, la tercera fue implementada por el investigador, a través de la técnica de observación.
