新規クリーム様乳化物として、脂肪成分と水分と乳化剤とを含有し、特に乳化剤には乳化作用のあるタンパク質又はペプチドを含有しないものを用い、これら脂肪成分と水分と乳化剤とによって乳化させたものとすることで、原材料に含有されるタンパク質成分に由来する味や香りが生じず、乳化作用やホイップした際の保形性等の物性を十分確保することができ、従来の生クリームやクリーム代用食品などのクリーム類と同等に使用することができるクリーム様乳化物を提供する。
