This paper deals with the issue of industrial heritage from various perspectives: the historical, characterizing the wineries of each period and analyzing the recent boom in wine tourism; the historiography, introducing representative studies on the subject, and finally, the management, analyzing programs and activities that both government and private institutions develop to confer value to both the tangible and Intangible heritage of wine.

Este trabajo aborda el tema del patrimonio industrial desde diversos ángulos: el histórico, caracterizando los conjuntos vitivinícolas de cada período y analizando el reciente auge del enoturismo; el historiográfico, presentando estudios representativos sobre el tema; y, finalmente, el de la gestión, analizando los programas y actividades que tanto instituciones del Estado como privadas desarrollan para poner en valor los bienes tangibles e intangibles del patrimonio del vino.
