The present invention relates to a method of producing an organic fertilizer, which comprises the steps of: processing an organic waste to produce a main material; mixing the main material with a supplementary material to produce a salinity control agent; mixing the main material with the salinity control agent to produce a mixed material; and fermenting and aging the mixed material, wherein a good quality organic fertilizer that contains a good balance of nutrients needed to grow agricultural produce, trees, and crops and that is environmentally friendly by virtue of a relatively simple processing method can be manufactured.
