L’impasto è costituito dal fiore della farina e dalla semola, leggermente lievitato. Viene lavorato in fogge rettangolari o circolari, poi messo in forno. Appena si forma una crosta dorata, viene tolto e tagliato a metà, in senso orizzontale, per essere messo di nuovo a tostare nel forno ancora caldo.
