Durante la fermentación fue determinada la temperatura de la masa a los 5 y 10 cm de profundidad y los índices de hinchamiento (IH) y fermentación (IF) de los granos, características que se incrementaron en el transcurso del proceso fermentativo, alcanzando los máximos valores el último día, en tanto que la temperatura más alta, en los dos puntos de medición, fue obtenida el 3er d, presentando un descenso en el 4to d.
