The invention relates to a method of extracting water from a water-containing product that is in contact with air of a first temperature circulating in an at least essentially closed drying chamber (30), wherein water vapour is emitted by the product and enriched in the circulating air.

L'invention concerne un procédé d'extraction d'eau d'un produit aqueux qui est en contact avec de l'air circulant à une première température dans au moins une chambre de séchage (30) sensiblement fermée. La vapeur d'eau émanant du produit vient enrichir l'air circulant. Le procédé consiste à comprimer l'air enrichi d'eau.
