본 발명은 멸치젓에서 고농축의 칼슘분말을 추출하는 방법 및 그 고농축 칼슘분말에 관한 것으로서, 보다 상세하게는 멸치젓에서 액젓을 추출하고 남게 되는 젓갈 찌꺼기를 몇 단계의 처리 공정을 거쳐 칼슘성분이 농축된 분말 형태로 제조하되 특히 멸치젓 특유의 비린 맛을 거의 완벽하게 제거하여 여성이나 어린이들이 쉽게 섭취할 수 있도록 하여 건강증진에 기여할 수 있고, 버려지는 젓갈 찌꺼기를 이용함으로써 농가소득 증진에 기여할 수 있도록 된 멸치젓에서 고농축의 칼슘분말을 추출하는 방법 및 그 고농축 칼슘분말에 관한 것이다.
