The loin with neck is prepared from a side (8001) along the lines: front – between the second and third cervical vertebrae; back – between the last (sixth) lumbar and first sacral vertebrae along the anterior (cranial) edge of the ilium, lower – 75 mm from the body of the vertebrae and parallel to the vertebral body.

L’aloyau avec collier est préparé à partir d’une demi-carcasse (8001) par une coupe pratiquée le long des lignes suivantes: à l’avant – entre la deuxième et la troisième vertèbre cervicale, à l’arrière – entre la dernière (sixième) vertèbre lombaire et la première vertèbre sacrée le long du bord antérieur (cranial) de l’ilium, en dessous – à 75 mm du corps vertébral et parallèlement à celui-ci.
