”Porc de Franche-Comtén” tuotantoketjuun tulevat eläimet, jotka ovat kastroituja urossikoja ja naaraita, joita ei vielä ole käytetty jalostuksessa (karjujen lihan mahdollisesti epämiellyttävän hajun välttämiseksi), valitaan teknologiseen laatuun kahden eniten vaikuttavan geenin perusteella: halotaanigeeni (hal) eli stressialttius johtaa PSE-syndroomaan (vaalea, pehmeä ja vetinen PSE-liha) ja RN-geenin alleeli RN- (korkea pH-arvo) puolestaan johtaa ns. tervalihaan.
