Lycopin durch Sortenwahl etwa verdoppeln; demgegenüber sind mögliche Beeinflussungen des Gehaltes solcher Säfte an L-Ascorbinsäure wegen der bei der Verarbeitung des Rohmaterials auftretenden Verluste und der Möglichkeit ihrer Kompensation von geringer Bedeutung. — Im Falle der ernährungsphysiologisch wertvollen schwarzen Johannisbeeren ist es zweckmäßig, für die Saftbereitung Sorten auszuwählen, welche im Muttersaft hohe Vitamin-C-Werte ergeben.
