It was at the heart of this mountainous region, rich in history, tradition and know-how, that the reputation of ‘saucisson de l’Ardèche’ was founded. This reputation has been passed down through the ages: by Olivier de Serres, so-called father of French agriculture, in the 16th century in what was then his native province of Vivarais; by the famous local poet Charles Forot; by Curnonsky, who christened the Ardèche a ‘gourmet’s paradise’ and the small village of Saint Agrève a ‘Mecca for charcuterie’; and by Charles Albin Mazon, who paid tribute to the sausage and its origins in his 1890 work ‘Frivolous and serious travels around the Ardèche’, marvelling at the ‘ceilings lined with bacon, hock, trotters and strings of sausages’.EurLex-2 EurLex-2
